Halloween Pumpkin Treat

A fresh or frozen treat made with pumpkin – a great way to use up all that scraped out pumpkin flesh at Halloween.

Ingredients

3 cups of pumpkin flesh (scrapings from a Halloween pumpkin head are ideal)

1 large (16 oz) pot of fat free smooth yoghurt

 

Preparation and Cooking

Chop the pumpkin flesh into similar sized chunks and place on a well greased baking tray. Roast in the oven (20 to 30 minutes) until the flesh is cooked and soft. Allow to cool, then place in a bowl and use a potato masher to mash the pumpkin flesh until it is roughly pulped. Stir in the yoghurt. The mix can be combined with kibble and eaten straight away, or it can be frozen in ice cube trays or similar and fed as an ice cream treat.
